You still don't have a functioning oven, right? I'll look for some good, easy stove-top recipes with those ingredients.
Oh! Right off the top of my head: you could make stir-fry. That's incredibly easy to make, and could incorporate a lot of those veggies you have listed. And you could add fish, or crumbled veggie burgers, or noodles (ramen, spaghetti, whatever).
Low fat mozzarella doesn't make me choke. =)
And I hear that some of the brands of vegetarian cheese are pretty good, but due to some horrifying experiences with soy cheese, I am less than willing to try them. =P
Oh, another thing is, sometimes instead of looking for low-fat cheese, you should just go for the better, more expensive, higher-fat stuff. Sometimes the high-fat stuff has so much more flavor that you don't need to use nearly as much, and you end up saving a bunch of calories that way. Obviously, it's a moot point on something like pizza, but if you make spaghetti and you put parmesan on it, you'll get a lot more flavor out of a tiny amount of parmigiana reggiano, than you will out of a whole tablespoon of the kind that comes pre-ground in the green can.

Oh! Guess what! Since you mentioned the rat cages... we tried using paper towels, and they work GREAT. In fact, they are the best thing we've ever used -- better even than CareFresh. Our room is just now starting to smell, and we haven't changed the cages in over {hangs head in shame} two weeks. Can you believe that? Anyway, we bought new paper towels so we're changing the cages today. Paper towels are great. And the best part is we can change all six cages with about seven or eight rolls of paper towels, and the generic brand is only 50 cents a roll so that's only a few dollars. =D

No functioning oven, no. No stovetop either. Joell recomends Cracker Barrel low-fat cheese (1/3 less fat). She also gave me the recioe for a cheese and rice and veggies in a tortilla thingie that sounded really good too; I think I'm gonna try that. He does like some veggies; that helps.
I am the same way with soy cheeses; the only one I tried was so horrific, no way could I eat another brand without advice from someone I really trust. Cheryl? Any advice on fake cheese?

Cool beans on the paper towels! I have 1 galvanised R-670 and 2 galvanised R-690s; if you want to clean and paint them, they're yours. They are just sitting in my yard, because I am too lazy. I will send the guppie book next time I'm out.

Oooh, oooh, ooooooh, yeah, on the cages! If you don't want them I will definitely take them from you. You want money for them? Are they very rusty or gunky?
A list is good! A list helps!
I don't think they're rusty at all, they might be just a tiny bit corroded around where the shelves attach to the walls. I'll go out and look. Okay.
On the R-670, just the rings are rusted. No rust at all on the R-690s. BUT. The R-690s have metal pans, which are nasty, and I would definately replace. The R-670 has a plastic pan, and it's fine. No money; if you want any/all of them, they're yours.

Are they too big to go in a car? Perhaps when we do the ratlet/plant exchange, we can also do a cage exchange.
How will we do it this time? I'm definitely willing to drive down to you, which I think might be better for you. Though we will have to make sure we can borrow a car for it, but that shouldn't be a problem.
Do you think the cages will fit in the trunk or backseat of a medium sized car? Are they collapsible?
I really don't know, Laurie. I can't think. No way can Rusty drive for five hours right now, and I don't really want to leave him at home by himself either. The cages might fit into a car, I think they would fit in our Taurus, anyway, you've seen that. They aren't collapsable because I was a dumbass and put them together with the rings instead of like Jane recommends.
Oh! You know what. I sold my freind Laura one of my old R-690s, and she fit it into her car (which was full of junk at the time). I think you could do it. Maybe 2 in the backseat and 1 in the trunk?
